Sugar Snap Peas with Pickled Garlic, Radishes and Basil

Sugar Snap Peas with Pickled Garlic, Radishes and Basil
When you can buy vegetables that have been just picked, life just gets even better.
I was playing around this weekend and came up with a yummy side dish!
Feeds 8 people~
Ingredients:
2 Pounds cleaned snap peas- (you need to remove the small fiber that runs along one of the sides of the bean.)
1 jar Pickled Garlic (you can also make your own by heating 1/3 sugar, 1/3 white wine and 1/3 white vinegar and cook the garlic pearls till tender)
1 Pound thinly sliced radishes- think disks
4 ounces fresh basil
Sea salt and cracked black pepper to taste
Method-
Place pickled garlic and all of the liquid from the garlic into a sauté pan.
Reduce the liquid by ½ and make sure the garlic is tender
Add the snap peas and make sure the pan has high heat.
As soon as the peas are tender, add the radishes and basil and toss quickly.
You want the peas and radishes to be crisp and the basil to be wilted.
Season with salt and pepper and you are good to go!
