Fresh Corn Salad

One of the great joys of summer is fresh corn. It’s a little early in the season, but we saw some fresh corn at the market and I was inspired. This fresh corn salad comes together in minutes and will make you and the kids happy. 


  • 4-5 ears of corn 
  • 1-2 pints cherry tomatoes
  • 3 Oz extra virgin olive oil
  • 4 bunches chopped basil or purple basil
  • Himalayan sea salt
  • Cracked black pepper


  • Remove corn from the cob.
  • Sauté corn.
  • Once corn is about 80% cooked, add tomatoes and saute until they blister.
  • Add basil.
  • Salt and pepper to taste.
