Mushroom Ravioli

Cheese and Mushroom Raviolis with Wild mushroom sauce~

I don’t have time to cook!

That’s what everyone says.

Well, here is a recipe that you can make in 30 minutes:

Serves 4

Ingredients:

2 chopped shallots

4 chopped cloves Garlic

4 Oz XV Olive Oil

2 cups sliced white mushrooms

1 cup sliced Portobello mushrooms (no stem)

1 cup sliced shitake Mushrooms (no stem)

1 bunch Chopped chives

4-6 hot red peppers

Sea salt and cracked black pepper to taste

Crushed red chilis

1 Pound of Cheese ravioli

1 pound of Mushroom Ravioli

 

Method-

Sweat garlic and shallots in olive oil till tender

Add Mushrooms and sauté till tender

Add Crushed red chilis, cracked black pepper, sea salt and hot red peppers

In a separate pot of salted boiling water, cook raviolis and then drain the water from the pasta

Add the raviolis to the sauce and toss in the chopped chives.

Serve with a dry white or rose and roasted Italian Bread.
